Summer is in full swing, and that can only mean one thing: fresh, seasonal strawberries are finally available for purchase. Sure, the convenience of big box grocery stores means that strawberries are now available year-round, but when it comes to flavor, you can’t beat a strawberry grown locally, picked recently, and ripened in the sun instead of via chemical treatment.
Of course, strawberries are also beautiful, and isn’t it fun to make a delicious treat that’s also beautiful (and medicated)? Medicated butter is great in this recipe, especially if you’re cooking with decarbed BHO, which won’t affect the vanilla or berry flavors. You can also substitute medicated butter alternative and flax seeds if you’re vegan.
Strawberry Fields Forever Recipe
You will need:
- 1 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 2 eggs
- 1/4 cup butter
- 1 tsp vanilla extract
- 1 cup sugar
- 8 ounces fresh strawberries, halved
Preheat your oven to 350 degrees F. While the oven is heating, mix the flour, baking powder, and cinnamon in a bowl. Melt the butter (do not use a microwave if using medicated butter) over low heat or ideally in a double-boiler. Mix in the vanilla and sugar, and then add the eggs. Once that mixture is uniform, add it to the flour mixture and stir until moistened.
Pour the batter into a greased 9″x9″ pan, and top with the halved strawberries, cut side down. Bake 30-40 minutes. It’s done when a toothpick inserted in the cake comes out clean.
