REVIEW: Trader Joe’s Thai Vegetable Kao Soi

In our ongoing quest for delicious pre-made vegan meals, we’ve found another winner: Trader Joe’s Thai Vegetable Kao Soi.

A perfect balance of broth, veggies, and noodles, this comfort-foodie soup is a slightly sweet, slightly spicy, and totally yummy concoction that’s the perfect choice for warming up a cold winter day. The broth is a savory treat that’s both nutty and coco-nutty, with a warm, spicy finish. You’ll find delicious pieces of broccoli, cauliflower, carrot, and baby corn that even when microwaved manage to retain a bit of crunch. And oh, the noodles! Who knew that frozen noodles could be such a lovely texture, perfectly al dente and not at all chewy. The pièce de résistance is the crunchy noodle topping that you add after cooking.

At 430 calories and 70% daily allowance of saturated fat, it’s not exactly a diet meal, but it’s still a delectable treat worthy of indulgence. And for $2.99, it’s hard to find anything else that satisfies so completely awesomely. We’ve stocked our freezer with these in preparation for ice storms and snow days to come.

The down side? Trader Joe’s tends to make kickass stuff we get addicted to only to suddenly discontinue it…So you’d be wise to stock up on a bunch of Thai Vegetable Kao Soi ASAP.
