I am a wife, business owner and mother to two adorable boys. I’ve loved to cook since I was a child and now that I’m a mom I consider the meals I create to be one of the fundamental building blocks of happy, healthy kids. About six years ago I got a wake-up call as I stumbled across a book that changed my life. I began voraciously reading about the way food affects the environment, the human body, our long term health and our daily bodily processes as well. As a result I changed my diet and something incredible happened - I felt so amazing that I had no idea I had been walking around like a virtual zombie for years. With increased energy levels, mood, and vitality, I began telling everyone I could that they too could feel this good. This change then began to permeate every aspect of my life causing my husband and I to start a business in sustainable agriculture. A few years later, we now operate the first publicly traded Urban Agriculture company in the United States! We manufacture equipment for home gardeners as well as operate a sustainable 5-acre hydroponic greenhouse farm in New Jersey that grows living basil, lettuces, and other herbs to be sold at local markets. My passion for good food and the good health that comes with it runs deep, and that is how my blog Fueling Superheroes was born!

I was pleasantly surprised that these mushrooms flourished and I have become slightly obsessed with them (probably because […]
