RECIPE: Cucumber Tomato Yum Summer Salad

Cucumbers are a perfect veggie for the summer. They’re technically fruit, but let’s not split hairs. They’re great for hydrating and cooling you off, and they’ve very easy to prepare. All you have to do is wash them, peel them if you want, and slice them. They’re a great snack for kids because they can be dipped in dressing and eaten fresh.

If you want to use them as part of a meal, this salad always goes over great with my family. There are never leftovers! The recipe calls for cannabis infused olive oil, though you can also make an unmedicated version to share with everyone!

Cucumber Tomato Yum

  • 2 large cucumbers, sliced (peel or not – your preference)
  • 2 large tomatoes, seeded and diced
  • 1 medium red onion, halved and sliced
  • ¾ c cannabis infused olive oil
  • ¾ cup red wine vinegar
  • 1 ½ tsp white pepper
  • 1 ½ tsp kosher salt

Combine first three ingredients. In a small bowl, mix the infused oil, red wine vinegar, salt, and pepper. Toss vegetables (mostly fruits, technically, I know) with the dressing. Refrigerate overnight. Enjoy with amusing people!
