Many staff members and writers at Ladybud Magazine have very sensitive digestive systems and we’re always looking for foods that are easy to process but palatable to all kinds of folks.
One of our very favorites is Dr. McDougall’s Vegan Split Pea & Barley Soup because it’s hearty, healthy and easy to prepare. It comes it in a single serving BPA-free cup, and while our preference is to boil water and fill it up to the line, we don’t always have access to a stove, so we use a microwave at the office and it’s quite convenient. After a short time of heating, we like to stir in Red Star Nutritional Yeast Flakes because nutritional yeast packs quite a healthy dose of potassium, B vitamins, folate and so many other necessary nutrients. It also amplifies the savory flavor of the soup with a nice cheesey kick (minus the dairy).
With 7g of dietary fiber and only plant-based proteins, we feel very satisfied after lunch. We’re also huge fans of Dr. McDougall’s Vegan Lentil Couscous, Black Bean & Lime, and Pad Thai soups because every single one can be used as a delicious starter for homemade soups.
