RECIPE: Cheesy Gluten-Free Ganja Biscuits

This is my go-to recipe for when I want to medicate, but am leaning towards something a little more savory. It’s comfort food, and while it’s not necessarily the best for you, it’s gluten free and really hits the spot.

½ Cup Melted Ganja Coconut Oil
6 Large Free-Range Organic Eggs
1 Cup Grated Sharp Cheddar Cheese
3 Cloves Garlic, Minced
⅔ Cup Coconut Flour
1 Teaspoon Baking Powder
½ Teaspoon Coarse Sea Salt
Freshly Ground Pepper, to taste

Makes 12 biscuits

NOTE: I would not suggest doubling the recipe because coconut flour is a natural humectant, meaning it draws moisture from the air. the biscuits will get softer the longer you leave them out, so they are best right out of the oven.



Preheat oven to 400 degrees F (204 degrees C)

In a large bowl, sift together coconut flour, baking powder, salt and pepper. In a separate bowl, beat together the oil and eggs. Add the grated cheese and garlic, mix well. Combine the wet and dry ingredients and mix until well combined. Drop by spoonfuls onto a greased baking sheet. They will spread a little, but should fit nicely onto one large sheet.

Bake at for 12-15 minutes until golden brown on top. Enjoy!
